Steep: 15 to 20 minutes simmering

Elderberries and echinacea root are tough, fibrous botanicals. Unlike delicate flowers or leaves, they require a true decoction, meaning a sustained low simmer, to fully extract their active polysaccharides, anthocyanins, and alkylamides.
  1. Add the dried elderberries and echinacea root to a small saucepan with 500ml of cold filtered water. Do not add the ginger yet.
  2. Bring the water to a full rolling boil over medium-high heat, then immediately reduce the heat to a gentle simmer.
  3. Add the grated or dried ginger root. Cover the saucepan with a lid to trap volatile aromatic compounds and simmer for 15 to 20 minutes. The liquid will darken to a deep purple-burgundy color.
  4. Remove from heat and allow the decoction to rest, still covered, for 5 minutes. This resting period lets the temperature drop slightly and allows further passive extraction.
  5. Strain through a fine-mesh sieve or cheesecloth into two mugs, pressing the spent herbs gently with a spoon to extract all remaining liquid.

Cold brewing elderberries produces a milder, less astringent cup that is ideal for children or those sensitive to the more tannic, resinous notes released by heat. The immune-active anthocyanins in elderberry are water-soluble and extract well in cold water over a longer period, though some polysaccharides from echinacea root extract more completely with heat.
  1. Lightly crush the dried elderberries using the back of a spoon or a mortar and pestle to break the skin and help release anthocyanins into the cold water more efficiently.
  2. Combine the crushed elderberries, echinacea herb (preferably the aerial parts or dried flowers rather than root for cold brew), and sliced fresh ginger in a glass jar or pitcher.
  3. Pour 600ml of cold filtered water over the herbs. The higher water volume compared to hot brew compensates for the slightly lower extraction efficiency of cold water.
  4. Stir gently, cover the jar with a lid or cloth, and leave at room temperature for 2 hours, then transfer to the refrigerator.
  5. Allow to cold brew overnight, or for a minimum of 10 hours. The brew will turn a beautiful translucent deep violet.
  6. Strain through a fine-mesh sieve into glasses filled with ice. Sweeten with a small amount of honey stirred in until dissolved, or use a honey simple syrup for easier mixing. Consume within 3 days.

This method produces a potent, syrup-like elderberry and echinacea concentrate that can be stored in the refrigerator for up to two weeks. Dilute one part concentrate with three parts hot or cold water when ready to drink, making it an extremely practical option for busy school-morning routines.
  1. Combine 4 tablespoons of dried elderberries, 2 tablespoons of echinacea root, 2 teaspoons of ginger, and 1 litre of cold filtered water in a medium saucepan. You may also add a cinnamon stick and 3 whole cloves for additional antimicrobial depth and flavor.
  2. Bring to a full boil over medium-high heat, then reduce to a steady active simmer, leaving the lid slightly ajar to allow steam to escape. This is intentional: you are reducing the liquid volume by roughly half.

    • omg thank you for this because zinc is legitimately the thing i dont think about enough, and yeah elderberry alone isnt gonna cut it if youre trying to actually build immunity not just feel like youre doing something. i’ve noticed when im in remission and actually absorbing nutrients properly, adding seeds and mushroom powders makes such a difference in how i weather flares, but i never connected it to zinc specifically until now. pumpkin seeds sound way less likely to trigger me than some of the heavier immune boosters too so im definitely gonna test this combo out when the kids go back and those germs start circulating. do you know if the oyster mushroom powder stays mild on the digestive side or
